Just Desserts


This evening we will be celebrating Lindsay's 17th birthday with my family. Her birthday is July 27th, and
we did celebrate on her actual birthday this year in Plymouth, MA. My oldest daughter and her boyfriend James, who live in Boston were able to spend a day with us in Plymouth as well my my middle daughter Emily, who my husband picked up after she arrived by ferry from Martha's Vineyard!

We also celebrated with a birthday cake at our family reunion with my husband's side of the family. Once we returned from vacation, our dog became ill and we encountered a week from hell so we have finally arrived at a time when it feels comfortable  enough to celebrate once again.

Tonight my parents and sisters will come for a simple celebration--with just desserts! Lindsay picked a strawberry trifle (it's actually a torte but it is easier to lift and carry as a trifle so I altered that recipe a bit) and I made the pineapple angel food cake last night. This morning I whipped up a batch of toffee topped brownies.

The trifle is very easy to make and put together. There is never any left over...........

Strawberry Almond Cream Cheese Torte

Begin with any white cake--homemade or cake mix. Just be sure to use almond extract instead of vanilla extract. Let the cake cool completely and and divide in four pieces.


Wash and cut up 2 lbs of strawberries and slice.

Whip up 1 1/2 pints of heavy whipping cream, 1 pkg of 1/3 reduced fat cream cheese (softened) and 1 Cup of Confectioner's sugar. Add 1 1/2 tsp of almond extract. (I add an extra 1/2 tsp). Set aside. Whatever you do, don't start counting calories....

Using a trifle dish, (or any large bowl will do), take a large dollop of whip cream and place in the bottom of the empty dish. Add a few sliced strawberries as shown just to cover the bottom of the dish. See below:


To this, take 1/4 of the cake and tear into bite-sized pieces and place on top of the whipped cream and strawberries as shown below:


Then repeat by adding whipped cream layer, and on top of that, add more sliced berries-- this time completely covering the cake pieces:



Next as you've probably guessed, take the second 1/4 of the cake and tear into bite sized pieces: press this layer down gently with your hand to make more room in the dish.




Add another layer of whipped cream and strawberries.....


Add the third 1/4 of cake--the last 1/4 of the cake is extra. My family usually gobbles it up with any  cream and berries that are left over.


Press this layer down with your hand as this is the top layer but there still needs to be room for a nice layer of whipped cream and berries.


Now, just add strawberries....sometimes I completely cover the entire top in berries, but since my daughter asked for this instead of a birthday cake I will make a 17 out of strawberries for the top.


This is really yummy!!!! I have added blueberries (dessert for 4th of July celebration)....



Here it is......a real crowd pleaser too!

These toffee-bit topped brownies can be made with any homemade recipe or box mix. Just add a nice even layer of heath bar crunch crumbs to the top....YUM!
